Transfer the chicken to a platter, cover loosely with aluminum foil. Replace the skin and squish around to evenly distribute the cheese. We were also served cheese biscuits (similar to Red Lobster Cheddar Bay biscuits but not nearly as yummy as Red Lobster!) prior to dinner.
