Instead of forming the seitan into oval shapes, use scissors to cut the dough into small wing sized pieces (they will almost double in size, so keep them on the smaller size). It is moist, and perfectly spiced. Take another bowl, and mix the lime juice and soy milk together.

Cover the faux "bone" with jackfruit and wrap the rice paper around the jackfruit mixture, leaving the bone exposed (exactly like a chicken wing).

Then place the wings on a baking sheet sprayed with non-stick spray, or brushed with olive oil.
